Chettinad special Ukra is a delightful sweet served in most of the functions and marriages.My sister is an expert in making this dish,I learnt this recipe from her it came out well at my first attempt itself.Dal and rice fried in to golden yellow in ghee gives great taste and aroma Ukkara is usually served in chettinad marriage as a evening snack.I just love it and wanted to try this for sometime.
Some South Indians also cook this classic dish in Navratri as well. Here’s an easy way to cook this mouth-watering sweet dish and can be prepared at home. So, roll up your sleeves and lets get cooking!My mom usally make this for powrnami (Full moon day) viratham pasadham. The taste like a Halwa when its hot after cooldown its like a puttu texture.Its very easy to make also tasty to eat !

How to make Ukra Recipe

Heat pressure cooker with 2 tbsp ghee add moong dal dry roast until golden.Add 2 cups water to it.

Pressure Cook about 1 whistle in medium flame.until soft, dal should look whole but easily mashable.

To a sauce pan add jaggery and water, let jaggery melt completely.Set aside.

Heat oil & ghee add rava fry for a minute then add rice flour fry for a minute.

Add coconut fry for a minute. Then add cooked dal mix it well then add 1/2 cup water for flour and rava to get cooked.

Cook until thick.Then strain and add jaggery syrup.

Add 2-4 tbsp ghee mix well and cook until it rolls well add 2-4 tbsp ghee .Add pinch salt and fried cashews.Mix it well.
