Chicken Gravy is a delicious gravy made by cooking chicken with onion, tomato, ginger, cashew and pepper puree, tempered spices and masala powders. Chicken gravy is delicious with biryani, rice, chapati, puri, and Idli. This can be done very easily with home-made ingredients. Goes well with all kind of lunch and dinner varieties. Hotel style chicken gravy is more creamy, thicker and richer than the home-made style gravy. All restaurants have their own particular recipe, before standardising those recipes, a lot of tasting and experimentation goes on to get an outstanding and peculiar taste for each and every restaurant. So, there is no specific recipe for hotel style chicken gravy, the spices differ from one place to another so the recipe also can differ from one restaurant to another. To get an exact taste, we have to follow many tips, firstly use tender fresh chicken. If you have preplanner for this recipe marinate the chicken with basic spices. Use cashew and almond nuts paste to get thicken the gravy. Obviously use more oil and spices to get a hotel style look and taste. Oil floating on the top is always special in restaurants. But in home we always use less or adequate oil. Prefer freshly ground cumin seeds and fennel seeds powder and add garam masala powder, while chicken get 3/4th cooked. If you add garam masala powder before itself it may loss of flavours in the end. Here we do not use any artificial colour instead we use Kashmiri red chilli powder. In this recipe post, I’m sharing a Restaurant Style chicken gravy that you can easily prepare at home with less oil and spices, but you’ll like the flavours of chicken gravy.

Ingredients

  1. Heat the pan with oil.

  2. Add fennel seeds and red chilli.

  3. Add fresh curry leaves.

  4. Add garlic cloves.

  5. Add finely chopped onion and sauté.

  6. Add ginger garlic paste and sauté till its raw smell leaves.

  7. Add turmeric powder and Kashmiri red chilli powder.

  8. Sauté in low flame for 2 minutes.

  9. Add cleaned chicken pieces.

  10. Add red chilli powder and coriander powder.

  11. Add freshly ground cumin powder and fennel seed powder.

  12. Sauté in the oil itself for 5 minutes in medium flame. Do not add any water.

  13. Add salt to this chicken gravy and mix well.

  14. Add chopped tomato.

  15. Cover and cook in medium flame for 5-7 minutes. Do not add any water.

  16. Do occasional stirring  for  5 minutes to chicken coated well with masala.

  17. Add ½ cup of water.

  18. Add garam masala powder.

  19. Cover and cook for another few minutes.

  20. To grind fresh paste, in a mixie jar add cashew nut and pepper.

  21. Add little water and grind in to fine paste.

  22. Cook in medium flame for 8 minutes chicken gravy gets little thick and oil start ooze out around the pan.

  23. Add cashew nuts and pepper paste.

  24. Cook until chicken get cooked well and oil separate from the gravy.

  25. Cook for 5 minutes, chicken gravy got thicken and oil separated from gravy.

  26. Garnish with chopped coriander leaves and curry leaves.

  27. Delicious hotel style chicken gravy is ready for serving.
