Garlic podi recipe/poondu podi, is a an aromatic South Indian spice powder made using chana dal, urad dal, red chili and garlic. It needs very less ingredients which are commonly available in most of the households.We roast all ingrediets until get nice aroma after then it is hand pounded using a mortar and pestle. Its a usual in our family, mostly served with piping hot idlis and gingelly oil Also with Dosa & Paniyaram.

First crush the garlic .Heat the pan with oil.

Roast the garlic until turns golden brown color.

Now clean the oil from the pan.

In the same pan add urad dal ,Dry roast until turns golden color.

Add chana dal & toor dal ,Dry roast until turns golden color.

In the same pan add salt , Dry red chilies & curry leaves. Dry roast it in medium flame until turns crisp.

Finally add asafetida powder.

Once its Cool down and grind it with garlic to coarse powder.

Enjoy with hot soft idli . Mix with loads of sesame oil. Keeps good for 2 weeks in fridge.
