This Cheesy Veg Sandwich recipe is an outcome of the cravings I had when I wanted to have something cheesy and filling and not to mention healthy as well
There are 3 main components of a sandwich: the bread, the spread, and the filling.
The bread is actually the most vital part of a sandwich. This is important for a variety of reasons; perhaps the most important one is its ability to absorb liquid. If you have toppings like condiments and tomatoes that tend to get soggy, the right bread will absorb it and make it a non-issue.
The spread, we use green chutney for sandwiches. Green chutney is one of the healthiest & is used often in Indian cuisine. This chutney aids digestion & enhances the taste, aroma and nutrition of any dish.
Chaat Masala: An important ingredient is the Chaat masala powder or Sandwich masala. Chaat masala is a tangy flavorful spice mix that is often sprinkled on Indian snacks. You can easily find chaat masala online or any Indian grocery store if you live outside India.

- Slather your condiments on the bottom slice of bread.
- Add the densest vegetables, like pickles, followed by the lettuce and then the tomato.
- Add the cheese.
- Spread another layer of condiments on the top slice of bread.

To prepare green chutney

Firstly, to prepare green chutney in a mixie jar add mint leaves.

Add coriander leaves.

Add green chillies.

Add chat masala powder.

Add salt to this chutney.

Add little lemon extract.

Sprinkle little water and grind to make fine paste.

Sandwich green chutney is now ready for spreading on breads.
To prepare veg sandwich

To prepare sandwich stuffing take a wide bowel and add finely chopped cabbage.

Add finely diced carrots.

Add finely chopped tomato without its seeds and hard stem part.

Add chopped onion.

Add chopped cucumber.

Add chopped black olives (optional).

Add red chilli flakes.

Add chopped coriander leaves.

Add Italian herbs powder / sandwich masala powder.

Mix everything well and add mayonnaise.

Sandwich stuffing is ready.

Take white bread and spread unsalted butter on both the sides.

Spread freshly ground green chutney.

Add vegetable stuffing on one bread and cover with other bread.

Heat dosa pan and place the prepared sandwich.

Gently press and cook in medium flame, flip once bottom side reach golden brown. Cook until both sides reach same colour.

Place the bread with vegetables stuffing.

Add cheese slice.

Close with other bread.

Cook in medium flame until both sides turn golden brown.

Keep sandwiches on wire rack and allow to little warm.

Cut in to slices before serving.

Note
- You can use any mix vegetables of your choice. This veg sandwich can also be made with a single vegetable like carrot or sweet corn or bell pepper alone.
- You can make use any cheese of your choice to make a cheesy veg sandwich.
- For healthier option make veg sandwich with brown bread or multi grain bread.
- You can prepare in bread toaster or dosa tawa.
