Idiyappam, also known as string hopper, nool puttu, or noolappam, is a rice noodle dish originating from the Indian states of Kerala and Tamil Nadu and as well as from Sri Lanka. It consists of rice flour pressed into noodles, woven into a flat disc-like shape and steamed. Also known as sevai, Santhagai, Putu mayam, putu mayang, string hoppers. 

There is not much difference in the taste compared to traditional idiyappam. I enjoy trying different varieties of idiyappams as it is my kids favorite breakfast items like beetroot string hopper, green string hopper and ragi string hopper.

Idiyappam is a healthy and steaming delicious food which is good for our health. This dish can be useful for diabetic peoples. It contains vitamin E that is good for our skins. As well as, it is a healthy dish which consists of carbohydrates and rich in fibers, minerals.

The main role of this recipe is kneading the dough, Water for kneading should be VERY hot or you will not be able to make idiyappam. When the water is reaching its boiling point, once you see the big bubbles off the stove and pour the hot water over the flour. Don’t allow the water to cool. Knead while it remains hot. To prepare carrot juice, Peel and chop a carrot. Grind into fine paste by adding little water. Strain and extract juice. This juice can mix with water for boiling. We can prepare slightly spicy tempered string hopper like lemon sandhavai. We can prepare these kind of eye catchy color idiyappam and serve with coconut milk-sugar or white kuruma. Definitely kids will love to eat.

  1. Take idiyappam flour / processed rice flour.

  2. Firstly, prepare carrot juice from 2 carrots using 1/3 cups of water. Grind nicely and using strainer extract the juice.

  3. Add water to carrot juice then boil. (Processed rice flour: water ratio is 1:2)

  4. Add salt to this rice dough.

  5. Add little coconut oil.

  6. Allow to boil.

  7. Keep the flame low and add processed rice flour by continuous stirring.

  8. Switch off the flame and mix nicely with wooden spatula.

  9. Transfer this dough in to a wide bowl and press well with wet hand.

  10. Knead to a smooth and soft dough. If the dough looks dry then you can sprinkle some warm water on it and continue to knead.

  11. Grease the idiyappam mould with oil and stuff in the dough.

  12. Press the idiyappam into a spiral shape onto the greased plate.

  13. Place it into a steamer and steam cook for 4 to 5 minutes.

  14. Carrot idiyappam is ready.

  15. Yummy and healthy carrot string hopper is now ready to serve. Serve with white kuruma or coconut milk-sugar.
