Paniyaram are a nice snack or a tiffin variety. Usually I make plain or Kuzhi Paniyaram and These sweet appam with leftover Idli batter. Because of jaggery, these sweet Paniyaram have a porous and soft texture and taste very good. These also make a good tiffin box sweet snack.

This can also be had as breakfast or as festive recipe. It is prepared with Idli batter, coconut and jaggery as main ingredients. I had a cup of leftover dosa batter so tried this Chettinad sweet Paniyaram that came out too good also you can make Kara Paniyaram too.

This recipe is very easy & tasty recipe.small kids love to eat.my younger one when she was 4 year old she want to take for her school lunch box.i made paniyaram using ghee for her.

My mom made Paniyaram in a cast iron Paniyaram pan that was 30 years old one and it is one of the best things to happen in my mom kitchen. It is of the perfect size, making 7 Paniyaram in a go and the best part about it is even heating. The pan is pre-seasoned, so it is easier to start using it. The bottoms of the appam turn crispy and golden in less than a couple of minutes.

  1. In a larger Bowl add thick Idli batter(so use thick Idli batter without salt)

  2. Add rice flour & wheat flour

  3. Add jaggery and mix it

  4. Add grated coconut

  5. Mix it well and make sure the batter is slightly thin

  6. Heat the Paniyaram pan and add a few drops of oil in the moulds

  7. Pour the batter from a spoon till 3/4th of the mould. Sprinkle some more oil from above if required.

  8. Once the bottom starts browning, using a skewer or spoon, flip it over gently to the other side

  9. when they are browned well from all sides, remove

  10. Serve sweet Paniyaram hot or warm with milk, tea or coffee.

Note

  1. Once you mix the jaggery, make paniyarams immediately.
  2. Quantity of the rice flour added would purely depend on how thick your idli batter is. So add a little initially and then add more if needed. You may also use less if your batter is already thick.
  3. If the batter ends up thick, the bonda will turn out hard. If the batter ends up thin, the bonda will absorb more oil while frying. The batter consistency can be adjusted accordingly.
  4. Instead ofjaggery, you can also add karupatti .
