A south Indian breakfast recipe which is known as Paniyaram in Tamilnadu, paddu in Kannada and ponganalu in Telegu. Typically, paniyaram is extremely delicious which is prepared by soaking and grinding different lentils and rice together and fermenting it overnight. But this recipe is a lot easier than the normal paniyaram, no need to soak more time, skip worrying about the batter going unfermented during winter. Here I use leftover idli batter or dosa batter, with Idli rava/ semolina. They are basically a shallow fried bite sized breakfast or snack recipe. But it has subtle variations from region to region. while it is one of the easiest instant breakfast recipes. here we add seasoned onions and green chilli, instead you can improvise by adding finely chopped vegetables too. Instant paniyaram taste great when served hot with any type of chutney, however it can be packed for kids in lunch box.

To make paniyaram batter, take idli rava, poha soak in warm water till it covers for 5-10 minutes.

To make seasoning, heat the pan with oil.

Add mustard seeds, chana dal, Hing powder allow it to splutters.

Add chopped small onions and few curry leaves. Sauté until onion turns translucent.

Add grated coconut, chopped green chillies and salt sauté for a minute in low flame.

Now grind the soaked idli rava and poha in to coarse batter using blender. Do not add more water.

Transfer the ground batter in to wide bowel.

Now add seasoning in to this batter.

Add chopped coriander leaves.

Add fermented idli dosa batter. Or you can use baking soda before start cooking.

Mix them well.

Cover and rest for 10 minutes.

Heat the paniyaram tawa with little oil.

Pour paniyaram batter to 3/4th volume of the paniyaram mould.

Cook in medium flame, if you can see some batter on top of it that’s the time to flip it down.

Cook until paniyaram turns golden color on both sides.

Now instant spicy Kuzhi paniyaram is ready to serve with any type of chutney.
