Potato Rice / Aloo Roast Rice

It is a simple and quick recipe made with potatoes, it is an ideal tiffin box recipe which can be given to kids, adults for lunch. Potato rice or aloo rice bath is prepared using rice, potato, onion, red chili powder, ginger, garlic, some masala spices.  you can use this recipe for any choice of vegetables as you wish.  Also you can mix any vegetables like peas. If you don’t have enough vegetables and want to cook quickly and potato rice is the correct choice. Potato rice is easy to prepare and healthy too.

Potato Rice / Aloo Roast Rice

Ingredients

Instructions

  1. Pressure cooks the Basmati rice with salt and oil. (Cook 1/2 cup Basmati rice with 1.5 cups water with 1/4Tsp oil and 1/2Tsp salt)

  2. In blender jar add pealed roasted peanuts and black pepper, to make fine powder.

  3. Heat oil in a wide pan add onion, curry leaves and garlic cloves.

    Stir in medium flame for 2-3 mins.

  4. Add diced potatoes and mixed well.

  5. Add table salt for potatoes and turmeric powder mix well then cook for 5-10 mins on medium flame (Cook in oil no need to add water).

  6. Check once the potatoes cooked in three-quarters (3/4) of the word will keep pace before adding masala spices.

  7. Add sambar powder (Kulambu milahai podi) or you can add ¾ Tsp red chili powder and ½ Tsp coriander powder. And add Chettinad masala powder or normal garam masala powder.

  8. Mix well and cook with some more little oil till potatoes become crispy.

  9. Add peanut-black pepper powder depends upon your taste.

  10. Add precooked rice, keep the flam in low and mix it well.

  11. Finally add chopped coriander leaves.

  12. Yummy potato rice is ready for serving.

Note

  • Sauté everything as mentioned in the recipe in a thick bottomed pan or pot.
  • We can even substitute potatoes with baby potatoes.
  • If you feel this recipe is a bit spicy, you can use any raita or even sprinkle few drops of lemon juice.
  • You can also prepare Soaked rice, add afterwards with the whole mixture and do pressure cook.
