  1. Cook the potatoes with little salt. cook till they are 80% done. If you take a cooked potato and try to break, you should be able to do but with little effort. The potatoes should not be mushy.

  2. Peel the potato skin. If you used normal size potato cut in to cube.

  3. In large bowl add peeled potato. then add 1 Tbsp. tamarind water.

  4. Add 2-3 Tbsp. Paruppu podi.(usually we used for rice)/Toor dal podi

  5. Add 1 Tbsp. Kashmiri chili powder & garam masala powder. Mix it well.

  6. Add turmeric powder & required salt then mix it well.

  7. if its dry add little tamarind water as much you want.

  8. Marinate the potatoes about 5 minutes.

  9. Heat the heavy bottomed pan or non-stick pan with 3 tbsp. oil coconut oil.

  10. Add curry leaves & green chili.

  11. Then add marinated potato Cook in low flame for 10 mins until the potatoes are golden brown.

  12. Yummy Potato Roast is Ready. 

Note

  • Adjust the paruppu podi as much spicy you want.
  • Instead of paruppu podi you can use Idli podi too.
  • This powder can also be used to prepare Vendaikkai (okra) curry in order to remove the stickiness but retain the taste.
