Ragi or finger millet is extremely rich in Calcium, iron and protein. The millet which gives you a brown flour is very nutritious and is often given to children. It is very useful in controlling blood sugar as well due to its fiber content. Idli are rice and lentil steamed cakes and Dosa’s thin lentil and rice crepe called dosa is an all time favorite south Indian breakfast dish savored all over the world. Children love this lentil crepe and make a very filling and healthy meal. This can be served to children over the age of 12 months and have learned the art of chewing. You can make it like a pancake, by adding your desired vegetable toppings to make it an uthappam.

  1. Soak Urad dal in water for at least 3 hours.

  2. After 3 hours, grind the Urad dal in a blender by adding water little by little till fluffy and bubbles appear. It took approximately 1 cup of water to grind. Transfer the grinned batter to a vessel. add salt then Mix it well with your hand. Let the batter ferment for at least 8 hours or overnight.

  3. The batter would be raised well in the morning as shown in the picture.

  4. Now add crushed cumin, chopped onion & black pepper powder, Drumstick leaves.

  5. Now dry Roast the Ragi flour until nice aroma comes. Then add it to dosa batter .

  6. Add required water ,the batter like a normal dosa batter consistency.(I added 2 cup water)

  7. Heat a dosa tawa, add a ladle of batter to it and spread it thin or thick as per your preference. add required oil or ghee.

  8. Cook until brown for three minutes and flip the dosa. Cook for another two minutes and remove from tawa.

  9. Our Yummy Ragi dosa is ready to serve. Serve with coconut & Garlic chutney.

Note

  • Instead of Drumstick leaves add spinach also
  • Refrigerate the leftover batter and use within two days.
