Ven pongal also known as ghee pongal / khara pongal is one of the most popular South Indian breakfast recipes especially in Tamil nadu . Generally, these are rice or lentil based dishes which are either prepared by steaming or by frying. one such common and easy recipe is pongal recipe which can be prepared as khara pongal or spicy pongal too.

Serve pongal should be served hot to enjoy its best taste Hot . As you all know the best side dish for pongal are Tiffin sambar, coconut chutney or kostu. Basically it served for morning breakfast. Theis dish is primarily famous in tamil nadu.

The taste and softness of pongal depends not only in the quantity of ghee but also on the quality of rice and quantity of water, rice ratio . In Tamil nadu,we get Pongal rice(Raw rice / Pacharisi).

INSTRUCTIONS TO PREPARE VEN PONGAL

  1. First dry roast the moong dal, For that heat the pan add moong dal then dry roast in medium flame until get nice aroma(The color should not change).

  2. In a bowl add rice & roasted moong dal , Mix it well. Then wash & soak it for about 30 minutes.

  3. Once rice & dal soaked well drain the water from that.

  4. In a pressure cooker add soaked dal & rice. Then add required water, Mix it well.

  5. Now pressure cook about 3 whist in medium flame.

  6. Once the pressure is release natural then open the pressure cooker. Now the rice & dal cooked well, keep aside now prepare the tempering.

  7. For tempering heat the little bigger size pan or kadai. Add ghee & oil.

  8. Once the ghee & oil is hot add cumin seeds & black pepper, wait until splutters.

  9. Then add cashew nuts , fry it for few minutes .

  10. Now switch off the flame add chopped ginger , curry leaves , green chilies , asafetida water & turmeric powder. Mix it well for few minutes in pan heat .

  11. Now add required salt & tempering in the Pongal , Mix & smash it well. 

  12. Yummy Ven Pongal is ready to serve, serve with vada & sambar & coconut chutney.

Note

  • Adding oil is helps to Pongal is soft after cooldown.
  • Better to add whole asafetida gives the temple & hotel style Pongal taste.
