Cook the potatoes with little salt. cook till they are 80% done. If you take a cooked potato and try to break, you should be able to do but with little effort. The potatoes should not be mushy.

if its dry add little tamarind water as much you want.

Marinate the potatoes about 5 minutes.

Heat the heavy bottomed pan or non-stick pan with 3 tbsp. oil coconut oil.

Add curry leaves & green chili.

Then add marinated potato Cook in low flame for 10 mins until the potatoes are golden brown.
