Thattapayaru Kulambu, also known as Red Chori Beans Gravy, is a South Indian culinary delight that celebrates the hearty flavors of red chori beans. This savory stew combines tender red chori beans with a fragrant, spiced gravy, creating a wholesome and satisfying dish. The beans soak up the intricate flavors of the aromatic spices, resulting in a rich and comforting gravy that pairs beautifully with rice or Indian bread. Thattapayaru Kulambu is a testament to the vibrant and diverse cuisine of South India, offering a taste of tradition with every spoonful.

Clean Red chori beans (thattapayaru ) and soak for overnight.

After soaking for 7-8 hrs. completely drain the soaked water.

To prepare masala powder, heat oil in a pan.

Add shallots and peeled garlic and sauté for a minute.

Add fennel seeds in to it.

Add cinnamon sticks, cloves, and green cardamom and sauté for a minute.

Add grated coconut and sauté till It will begin to turn golden brown and become aromatic. This should take about 3-5 minutes. Switch off he flame and allow them to cool.

To prepare the recipe, heat oil in a pressure pan.

Add mustard seeds and cumin seeds and allow them to splutter.

Add finely chopped onion and some fresh curry leaves sauté until they turn golden brown.

Add ginger garlic paste and sauté for a minute until the raw smell disappears.

Add tomato puree and cook for 2-3 minutes.

Add kulambu powder and Kashmiri red chilli powder. Mix well and cook for a couple of minutes.

Add salt to this gravy and sauté until it become thick.

Add the soaked red chori beans (thattapayaru) and mix everything together.

To this add potatoes.

Add water to achieve your desired consistency. The curry can be thick or slightly thin, depending on your preference.

Check the salt level in this stage and allow to boil for 2-3 minutes.

Add the ground masala paste with little hot water to reach the desired consistency.

Pressure cooks them over medium flame for 2 whistles.

Open the lid once the pressure naturally released .

Garnish with some chopped curry leaves and coriander leaves

Delicious red chori beans gravy is now ready for serving.
