Adai dosa | lentil dosa is a popular South Indian tiffin / breakfast recipe. Adai is loved by everyone at home. Generally, we take Adai with avaiyal. Adai made by soaking rice along with dals. Always we prepare with idli rice, raw rice, urad dal, chana dal, toor Dal. There is always variation in the measurement of dals and grains added. This is a nutritious healthier version of adai. Red rice adai made with Kerala Matta rice with black urad dal and chana dal, it is soft and since we use it with skin of black urad dal, it adds more nutritional value as well. Matta rice is more nutritious than white polished rice because parboiling before milling retains some nutrients. Normal white rice doesn’t contain any fiber. The brown outer layer of the Matta rice contains many nutrients and white rice is made by polishing away this valuable layer. One cup of Matta rice can contain 84 milligrams of magnesium and one gram of calcium. It also contains vitamins. Also, very filling, you can take it for breakfast or early dinner as well. Adai Recipe | Kerala Matta Rice Cabbage Adai

Ingredients

Instructions

  1. Wash and soak together Kerala Matta rice, Skinned urad dal and chana dal for 3-4 hrs.

  2. In a blender add red chillies, garlic cloves, Hing powder, grated coconut and natural sea rock salt.

  3. Grind them in to rough coarse mix without adding water.

  4. Add few curry leaves.

  5. Add soaked rice and dals.

  6. Grind the batter by adding water little by little.

  7. Add enough water to make adai batter consistency, not too thin.

  8. Add chopped onions, cabbage and coriander leaves.

  9. Heat dosa tawa to make adai dosa.

  10. Take ladle full of Matta rice adai batter, from the center move the batter outside. Do not spread like the usual dosa. 

  11. Sprinkle oil or ghee.

  12. Cook in medium flame until adai turn golden color for both sides.

  13. Yummy, healthy Matta rice cabbage adai is ready to have with coconut chutney and spicy curry leaves chutney.
