Here’s a fantastic side dish recipe side dish for all types of tiffin items. This is my grandma’s favorite recipe. she used to prepare the kurma using traditional mud pot with viragu aduppu. Also she used to grind the masala using traditional stone grinder (Ammikal). These all give the wonderful flavor for this kurma. When I went to my grandma she makes this wonderful kurma recipes, it was new and interesting to me. Now a day i miss my grandma & My mom cooking. whenever i prepare this kurma i always said to my kids this my childhood favorite kurma for Idli.

As I am a big fan of brinjal recipes, I tried it immediately as a side dish for pipping hot hot Idli . It was very nice with mild flavor of masala/spices. I just loved it with Idli.   1. First pressure cook the Brinjal . For that heat the pressure cooker add green chilis & Brinjal.

  2. Add curry masala powder & water.

  3. Now pressure cook it in medium flame for about 3-4 whistle.

  4. Once the pressure is released open the cooker then remove the brinjal skin.

  5. Now Smash the  the brinjal & green chilies using smasher. Don't use blender then taste won't be good.

  6. Heat the kadai with oil. 

  7. Once the oil is hot add mustard seeds & cumin seeds.

  8. Once the mustard seeds & cumin seeds Splutters add onion & curry leaves .

  9. Sauté the onion until translucent.

  10. Now add tomato along with required salt, sauté it until tomato cook & smashed well.

  11. Once the tomato cooked well add smashed brinjal & green chili.

  12. Sauté for few minutes in medium flame.

  13. Now add warm water. Mix it well cook another 5-8 minutes in medium flame.

  14. While cooking prepare the coconut masala paste for that add all ingredients under 'to prepare masala paste' in to the blender. Then grind like a fine paste.

  15. After 5-8 minutes add coconut masala paste .Mix it well.

  16. After add the coconut masala cook another 3-5 minutes in medium flame(Don't over cook).

  17. Finally add coriander & curry leaves .

  18. Now Our Yummy tasty kurma is ready to serve. Serve with hot hot idlis, Dosa & chapati

Note

  • Usually we prepare kurma with green brinjal , Instead of that you can use purple verities too .
  • Instead of curry masala powder you can use kulambu podi or sambar powder too.
  • My green chilies not too spicy so I added 9 green chilies s you can just the spicy level.
