I consider the variety rice in rice dishes is a great finding. When we are in a hurry to cook up a meal or too lazy to make a meal, the variety of rice dishes are very easy to prepare. Not just that, variety rice recipes work fanciful for left over rice. Variety rice dish can prepare with left over rice also. Among all the variety rice recipes, Milagu Sadam or Pepper rice or pepper cumin rice is the simplest. It’s a straight forward dish which uses minimal, common ingredients from your storeroom.
Black Pepper Rice (Milagu Sadam) is a delicious South Indian-style rice dish flavored with freshly ground black peppercorns. In my childhood times, my mother prepares hot steam rice with spoon full of ghee along with she mixed freshly crushed pepper and cumin seeds with adequate salt. You won’t believe, such a simplest recipe, that time we don’t need any side dishes but I love to eat with crispy potato fry till now. Here I made the same recipe with simple alterations. This pepper rice I prepared many times during corona pandemic lockdown periods, though pepper rasam is useful but it is a diluted form of pepper. In this rice recipe we can give enough quantity to kids.

Milagu Sadam Recipe | Pepper Rice | Black Pepper Rice

To prepare Pepper cumin rice
Precooked the raw rice, should not get mushy.

Take mortar and pestle (or blender).

Add pepper, cumin seeds make like a coarse powder.

Heat a pan with ghee.

Add pepper cumin coarse powder and few curry leaves.

Sauté until all get sputters. Add salt.

Add pre-cooked raw rice.

Mix carefully in low-medium flame.

Healthy pepper cumin rice is now ready to serve with hot brinjal gosthu.
Note
- cooked rice should not be mushy.
- always use roughly and fresh crushed pepper and cumin seeds not a powdered one.
