Low fat steaming version of vadai can be made and add in the gray. But in hotels deep fried vadas are crumbled and used. So I followed the recipe and deep fried the Vada, used it. Off to the recipe This Vada curry is extremely flavorful especially the finally seasoning makes it scrumptious! The melt in your mouth masala Vada completely drenched in flavorful gravy makes it absolutely drool worthy!

how to make vada curry

Soak Chana Dal / Kadalai paruppu for 2 hours. Drain the water completely and transfer it to a blender and also add fennel seeds, dry red chilies , required salt and grind it to a coarse paste.

Fry the Vada mix in oil until golden . Once golden remove from oil and break them into small pieces and keep it aside

Heat oil in a pan and add cinnamon stick, cardamom , bay leaves and cloves. Add finely onions, some salt and saute until the onions turns golden.

Then add ginger garlic paste sauté it until raw smell goes off. add green chilies also.

Now add tomato ,sauté it until soft & mushy.

Now add Turmeric powder, coriander powder, Garam masala powder and chili powder

sauté it until raw smell goes off .also oil separate.

Add 5-6 cup water ,salt & mint leaves. Wait until boil.

meanwhile grind coconut with cashew nuts & fennel seeds using 1/4 cup water

once it s boiled add the broken masala vadai and cook for few more minutes.

Now add coconut paste, cook another 3-4 minutes in medium flame.

Finally add chopped coriander & mint leaves then switch off the flame.

Our Delicious Vada Curry is ready to be serve.
Note
- You can make this recipe with the leftover masal vada as well.
- Add enough water as it requires lots of water.
- Instead of fried vada you can steam cook the vada batter too
