Adai Aviyal is one of the famous Tamilnadu popular protein rich breakfast dish. Aviyal goes very well with Adai. Adai dosa is a healthy dosa made with different dal and rice. Avial is made with lot of vegetables in coconut paste and curd. The aroma of aviyal made in coconut oil will definitely make you eat one more adai. This can be a flawless healthy breakfast. You can also add moringa leaves which is a good source of iron. Increasing the intake of moringa leaves increases the hemoglobin level. Adding it to adai dosa can be a best and easy way for it. Unlike Idli / Dosa, Adai batter doesn’t need much fermentation and hence its very quick and easy to make Adai. It’s just the soaking time of rice and dals. Once the soaking time is over, we can grind it and our batter will be ready in minutes. Usually, adai is spicier and aviyal less spicy, so they both paired well for breakfast or heavy dinner.

How to make Adai Aviyal Recipe
To prepare aviyl

To prepare aviyal, take mixed vegetables (brinjal, carrot, beans, drumsticks, yam and green chillies, ash gourd).

Add enough water, salt and turmeric powder. Cover and cook in medium flame until all vegetables cooked well.

In mixie jar add cumin seeds, garlic clove, small sized big onion, grated coconut, dry red chilli, green chillies.

Grind them in to coarse mixture with little water.

Add this coconut paste in to cooked vegetables. Allow to boil.

Add thick curd and required salt.

To tempering. Heat the pan with coconut oil.

Add mustard seeds, Hing powder and dry red chillies.

Add chopped onions, salt and few curry leaves sauté for 2 minutes.

Add in to avaiyal and mix it.

Healthy and delicious aviyal is ready.
To prepare adai

To prepare adai batter, take Idli rice, toor dal, fennel seeds, cloves and cinnamon stick.

Wash and soak them all for 1.5 to 2 hrs.

Grind the rice and dal with dry red chillies and spices in to little coarse batter with adding little water.

Add required salt.

Add chopped onions, drumstick leaves, and grated coconut.

Mix them well. No need to ferment, adai batter is ready.

Heat the dosa tawa, pour ladle full of batter and spread as little thick in circular motion.

Sprinkle oil around and on adai. Cook in medium flame.

Once the bottom looks golden and crispy then flip and cook the other side.

Press it down with spatula to cook evenly.

Note
- Herbs and spices can be added less or more as per your requirements.
- Allow batter to ferment like idli batter then you’ll make crisper adai dosa, that’s also tastes good.
