To prepare beetroot rice, first, heat the pan with oil.

Add mustard seeds, urad dal and chana dal allow all to splutter and turn golden brown.

Add chopped onion, green chilli and fresh curry leaves.

Add salt to this rice.

Add grated beetroot.

Do not add any water. Sauté in medium flame for 1-2 minutes.

Cover and cook for 2-3 minutes, do occasional stirring.

After 4-5 minutes beetroot got thicken.

Add precooked rice.

Add some ghee.

Add some ghee roasted cashew nuts.

Mix gently in medium flame.

Garnish with chopped coriander leaves.

Tasty and healthy beetroot rice is ready for serving.
Note
- You can add vegetables in to it like green peas, potatoes and carrots.
- Add some cubed beet roots along with grated beetroot for a better experience.
