An extremely simple and tasty rice / vegetable rice recipe loaded with flavour and taste. It can be an ideal lunch box or tiffin box recipe that can be prepared in a minute with the basic vegetables and spices available in any kitchen. Flavoured rice recipes are perhaps one of the favourites and popular Indian lunch box recipes. It is generally prepared with a combination of rice and vegetables where an individual vegetable or herb is treated as a hero ingredient. There are not many ingredients used in the recipe and thus this capsicum rice pairs nicely with a side of a vegetable or paneer curry, lentils or even a simple onion-tomato raita.

Capsicum/ bell pepper are low in calories and exceptionally rich in vitamin C and other antioxidants, making them an excellent addition to a healthy diet. Bell peppers are excellent sources of vitamins C and A–antioxidants that neutralize free radicals, thus helping to reduce the risk of heart disease, some cancers, and cataracts, and to alleviate symptoms of arthritis and asthma. Red capsicum packs the most nutrition, because they’ve been on the vine longest. Green peppers are harvested earlier, before they have a chance to turn yellow, orange, and then red. Compared to green bell peppers, the red ones have almost 11 times more beta-carotene and 1.5 times more vitamin C.  Capsicum has found to have a good effect on gastrointestinal problem like flatulence, stomach upset, diarrhoea and even abdominal cramps. Also, it has a beneficial role in healing stomach ulcers.

The recipe is versatile enough for you to include more veggies like carrot, green peas, cauliflower or potatoes. More veggies will not only add more flavor but will also increase the nutritional content in the dish. Here I’m added sweet corns with capsicum. If you have cooked rice ready then you can make this in a jiffy. Capsicum is a very flavourful vegetable. We get this in 3 colours, red, green, and yellow. I always buy the green capsicum, here I used green and red capsicum with sweet corn. Nowadays kids like to have sweet corn, so, we can make use of it. Carefully combine with this sweet corn to capsicum. No need to prepare any fancy curries for side dish, It can goes well with raita and tomato ketchup too.

  1. Heat a pan with oil.

  2. Add chopped garlic.

  3. Add thinly sliced onion and sauté for a minute.

  4. Add chopped capsicum and sweet corn.

  5. Add chopped tomatoes.

  6. Add salt to this rice. Sauté until tomato got half mushy.

  7. Add red chilli powder and coriander powder.

  8. Add cumin powder and garam masala powder.

  9. Sauté in medium flame in the oil itself until oil start separates.

  10. Now add finely chopped red capsicum.

  11. Cover and cook for 3-5 minutes.

  12. In 4 minutes, all got cooked well.

  13. Add precooked rice.

  14. Mix gently in low flame.

  15. Garnish with chopped coriander leaves.

  16. Yummy bell pepper rice / capsicum rice is now ready packing.
