Potato fry/crispy potato fry is loved by almost everyone. There could not be anyone who doesn’t love crispy potato fry. Shallow fried crispy potatoes in spicy curry powder which is very easy to make in minutes. This is definitely one of the easiest of all potato fries and gets good reception at home… be it for regular at home meal or lunch box is sure one good accompaniment for curd rice, sambar sadam or rasam sadam. I love to eat it plain too 😛 This crispy potato fry is also termed as “coin potatoes” in our home and my daughter loves to take it to school for lunch box paired with curd rice!

  1. Peel the skin of potato, wash, slice to equal sized rounds. 

  2. Heat the heavy bottom pan with oil, temper with the items given under ‘To temper’ table in order.

  3. Add sliced potato, salt & Turmeric Powder ,mix it well then cover and cook in medium flame with out water. Stir it occasionally

  4. Once the potato cooked well add cimin powder,pepper powder,coriander powder & red chili powder, mix it gently, again cook the potato in medium flame until how much crispy pototo you want, stirring every 30 secs.

  5. Once its done add fresh curry leaves then switch off the flame then transfer to the serving Bowl.

  6. Yummy Potato fry is ready.

Note

  • Cooking in iron kadai or cast iron pan gives good results. In non stick pan, the texture is slightly different.
  • Cook in medium flame always for best results.
  • There are many variations you could do to suit your taste buds.
  • To better result cook with out water
