Select young and fresh leaves.

Remove nutrient deficient yellow leaves and insect bites leaves.

Remove leaves from big stem, if it has small tender stems, it is not a problem. You don’t need to remove that as we are making soup. Wash thrice.

To dry roast, heat the pan.

Add coriander seeds and cumin seeds.

Sauté them till turn aromatic and golden colour and allow to cool and grind in to rough coarse powder.

To prepare soup, take cleaned moringa leaves in cooker.

To this add washed and 30 minutes soaked moong dal.

Add shallots and sliced garlic cloves.

Add chopped tomatoes.

Now add roughly crushed coriander and cumin seeds.

Add peppercorns.

Add little turmeric powder.

Add enough water to make a soup.

Pressure cooks in medium flame for 4-5 whistles.

Allow to release the pressure naturally and open the lid.

Make strainer ready to drain the soup.

Drain the soup completely.

Allow the solids parts of soup to cool and transfer to mixie jar and grind like a smooth paste with adding little soup.

Again, strain the ground moringa leaves with dal and separate the all juice from the cooked materials.

Add first plain filtrates to this thick one.

Add salt and crushed pepper to taste.

Add fresh chopped coriander leaves.

Allow to boil for a minute.

Very healthy and tasty moringa leaves soup is ready for serving.
Note
- If you don’t add any dal varieties pressure cook for 2 whistles.
- Want feed kids as such or give little tempering with mustard seeds and Hing and mix with rice and feed like rasam rice.
