Ennai kathirikkai recipe | brinjal curry with detailed photo and video. It is a traditional Tamil cuisine curry but is hugely popular across all states of south India. Ennai kathirikkai recipe is one such simple stuffed gravy from the Tamil cuisine. using baby or tender brinjals compared to long or huge purple or green brinjal. also, make sure to cut them at the bottom as “X” and get the masala get stuffed inside and fry them. Some people have to eat this with biryani too that time you can make little dry by reduce the quantity of tomato and onion. Shallow cook the brinjals till 765% in oil. Do not fully cook in oil because we have to cook again in main curry. Cook the curry with stuffed brinjals in low flame till the oil oozes out. Be generous in using oil, layer of oil at the top of this curry is peculiar of this recipe. Adjust the consistency of gravy according to your needs. consume this curry with steamed rice, roti or chapati. First, I hesitate to prepare in busy morning time but now I have habituated once in a week, if I prepare in the morning for my husband and kid lunch box it’ll remain for dinner having with idli.

Ingredients

How to make Ennai Kathirikai Kulambu Recipe

  1. To prepare stuffing masala, heat the pan with oil.

  2. Add chopped onion, garlic and few curry leaves.

  3. Sauté until become translucent.

  4. Add cumin seeds, fennel seeds, black pepper and toss well.

  5. Add red chili powder and turmeric powder sauté until raw smell goes off.

  6. Add grated coconut sauté until nice roasted coconut aroma comes out.

  7. Add salt and little tamarind water mix them well.

  8. Remove from the heat and allow it to cool down.

  9. Grind them in a mixie in to smooth fine paste.

  10. Take 1 kg small purple brinjal wash and cut like “X” in the bottom of it.

  11. Stuff the sautéed ground masala in to brinjal. Reserve the remaining paste will be add in to main gravy.

  12. Take tamarind extract from 3 big lemon sized tamarind, in a clay pot.

  13. Add sambar powder, red chilli powder, turmeric powder and natural sea rock salt.

  14. Add the remaining ground masala paste in to it.

  15. Mix them well.

  16. Adjust the spiciness according to your preference in this stage.

  17. Heat the pan with gingelly oil.

  18. Add stuffed brinjals, cover and cook in medium flame until ¾ th cooked.

  19. Cook for about 10 minutes, till brinjal turns soft and little brown colour. And keep aside.

  20. Heat he pan with gingelly oil to make main brinjal spicy and tangy curry.

  21. Add mustard seeds, cumin seeds and fenugreek seeds and sun-dried seasoning ball. Allow them to splutters and turn in to golden colour.

  22. Add few curry leaves and chopped garlic cloves. Sauté for a minute.

  23. Add chopped small onion and big onion sauté till turn translucent.

  24. Add salt and chopped tomatoes toss till it become mushy.

  25. Add 2 whole green chillies.

  26. Now add that tamarind spicy mixture in to it.

  27. Allow it to boil until raw smell goes out.

  28. Then add masala stuffed and sautéed brinjal to the curry.

  29. Allow to boil in medium flame until oil separates from the gravy.

  30. Add few curry leaves and small piece of jaggery to equalize all tastes

  31. Spicy and tangy delicious village style brinjal curry is ready for serving.

Note

  • Use round tender brinjals for this recipe.
  • Wash, dry the brinjals thoroughly. Cut the brinjals till the stem. Do not cut all the way down then we can’t stuff the masala.
  • Water consistency can be adjusted as per your preference.
