This brinjal tomato curry commonly known as Kathirikai Thakkali Kadayal in Tamil is a common side dish in Tamil Nadu. This recipe is a kongunad version of Kathirikai gosthu which is simple and easy to make. This is a very easy brinjal and tomato mash that can be made in minutes. This brinjal tomato curry goes well with idli, dosa, plain rice topped with ghee, roti or even curd rice. I have used equal quantity of brinjals and tomatoes for this recipe. Country tomatoes are preferred for this recipe as it’s a little sourer than the Bangalore tomatoes. Traditionally the entire recipe is made with a cast iron pan but I have simplified the recipe by using a pressure cooker. The pressure cooker reduces the cooking time and hence helpful for busy people. We can do any alterations, like cook alone with dry red chillies or like here with sambar powder. Even a very small change can bring whole new version of the curry.

To prepare sambar, firstly heat the pressure pan.

Add chopped tomatoes.

Add chopped brinjal.

Add dry red chillies.

Add sambar powder or kulambu podi.

Add water and mix well.

Pressure cook it in medium flame for 2-3 whistles.

Allow to release pressure naturally. Open the lid.

Mash it well with masher and keep aside.

Heat he pan with oil.

Add mustard seeds and urad dal and allow to splutter.

Add cumin seeds.

Add asafoetida powder.

Add fresh curry leaves.

Add thinly sliced big onion and sauté for a minute.

Add salt to this recipe.

Sauté in medium flame till 3/4th cooked not too fully translucent.

Add water till cover onions.

Allow onion to cook in boiling water.

Add mashed tomato brinjal.
-
Mix well and allow to cook for another 5 minutes.

Add little jaggery powder.

Allow to boil for 5 minutes.

Garnish with chopped coriander leaves.

Very tasty tomato brinjal sambar is ready for serving.
