Ridge Gourd Brinjal Kadayal with full video and step by step pictures. Today we are going to see another Kadayal recipe for idli, dosa and Ven pongal. Kadayal means adding the required vegetables and cooking well and mashing with wooden masher called mathu and tempered with some tempering. Ridge guard brinjal Kadayal goes well with steamed rice or dosa. We make Kadayal using ridge gourd or brinjal. Here we have to include both the vegetables along with onions, tomatoes and spices. Brinjal and Ridge Gourd masiyal is a quick and easy recipe for idly or dosa. This dish is very handy for busy morning times. Brinjal is not everyone’s favourite so this dish is an easy way to add in your diet. Combination of brinjal and ridge gourd along with onion and tomato gives different taste and flavour. Once you try this, I am sure this will be in your regular dinner or breakfast list. Traditionally Kadayal dishes are prepared in the kal chatti and mathu is used for mashing the vegetables. Generally, for Kadayal dishes, we use only green chillies and red chillies for the heat. I have added just a teaspoon of sambar powder and it doesn’t alter the taste. When compared to sambar, this Kadayal can be made in very less time which it makes a healthy side dish for breakfast.

Take brinjal and ridge gourd, clean and cut in to cubes.

Heat oil in an earthenware pot.

Add mustard seeds, allow to splutter.

Add urad dal and cumin seeds, allow to splutter.

Add broken red chillies without any seeds.

Add chopped small onions.
-
Add some fresh curry leaves and sauté until onion become translucent.

Add asafoetida powder.

Add chopped tomatoes.

Add natural sea rock salt. sauté until tomato get half mushy.

Add chopped green chillies.

Add chopped ridge gourd and brinjal.

Add turmeric powder.

Sauté in medium flame for 2-3 minutes in the oil itself.

Cover and cook in medium flame for 2-3 minutes. Do occasional stirring.

In 3-4 minutes, veggies got mushy and water ooze out completely from them.

Add kulambu powder or red chilli powder and coriander powder.

Take big goose berry sized tamarind pulp and soaked in water.

Add tamarind water.

Add enough water to reach required consistency.

Cover and cook for another 5 minutes, do occasional stirring to avoid get masala sticking at the bottom of the pan.

In 5-6 minutes, tamarind’s raw smell will leave.

Switch off the flame, and smash the veggies with wooden masher.

Garnish with chopped coriander leaves.

Delicious brinjal and ridge gourd curry is now ready for serving.
