You can use paneer directly or roasted one. But I always prefer roasted one. while roasting the paneer cubes, care should be taken to avoid stick on the pan. Non-stick pan is preferable. If you use paneer directly without roasting there is a chance of crumble with rice. Basmati rice is most common rice used for this recipe. How to make methi pulao recipe

To Roast Paneer cubes: Heat the pan with oil add ¼ tsp. red chili powder, ¼ tsp. garam masala powder and paneer cubes. Roast paneer about 1 min. till they turn golden brown. keep aside.

Heat pressure cooker with oil and ghee.

Once the ghee and oil are hot, temper with the items given under “To Temper” in ingredients table.

Add thinly sliced onion, sauté till onion turns translucent.

Add green chilies and ginger garlic paste, sauté until raw smell goes off.

Add Fenugreek leaves, frozen green peas and diced carrots. Sauté about 2-3 mins.

Add 1/2 tsp. garam masala powder, required salt and mix well.

Add enough water and allow to boil.

Add pre-soaked (20mins.) Basmati rice without any water. Mix carefully.

Add roasted paneer cubes.

Close the pressure cooker lid cook about 5 mins, in a medium flame or for 1 whistle.

Allow the steam to escape naturally and open the lid. Carefully mix the pulao.
