A spicy and tangy kuzhambu prepared with the goodness of garlic and pepper, a perfect accompaniment for hot steamed rice and drizzle of sesame oil makes for a perfect midday lunch or dinner. Since the Recipe contains garlic and pepper corns, it helps soothe a cold or cough. It is spicy and tangy, at the same time garlic adds a lot of flavor to the curry. It makes for a perfect accompaniment with hot steamed rice and a generous drizzle of sesame oil. Pepper and Garlic are known be the most medicinal ingredients in our kitchen. Garlic is a natural antibiotic. It helps in reducing blood pressure, sugar and cholesterol. It is rich in selenium. I like the most about this recipe is that it is not just garlic and black peppercorns in this curry but a lot of other spices freshly roasted and ground to make the base of the Poondu Milagu Kuzhambu. Apart from the spices, I also used a batch of curry leaves Serve the spicy and healthy Poondu Milagu Kuzhambu with hot steaming rice along with a teaspoon of ghee or oil and tasted pappad and enjoy this perfect healthy meal.

  1. To prepare pepper garlic gravy, take big lemon sized tamarind pulp and soak it in hot water.

  2. To prepare masala paste, add oil in a pan.

  3. Add fenugreek seeds and cumin seeds.

  4. Add pepper corn sauté until turn slight golden.

  5. Add fresh curry leaves.

  6. Add shallots and garlic cloves sauté until get half cooked.

  7. Add chopped tomatoes.

  8. Add salt to this masala and sauté for 1-2 minutes.

  9. Add grated coconut and sauté well for 2-3 minutes.

  10. Allow to cool and transfer them in to mixie jar, grind with little water to make fine paste.

  11. To prepare pepper gravy, heat gingelly oil in a wide pan.

  12. Add mustard seeds, fenugreek seeds, urad dal and whole asafoetida.

  13. Add garlic cloves and shallots.

  14. Add fresh curry leaves and sauté until onion and garlic get slight golden brown.

  15. Add sauteed onion garlic masala paste.

  16. Add turmeric powder.

  17. Add coriander powder.

  18. Add homemade sambar powder.

  19. Sauté in medium flame until spice’s raw smell leaves and masala get thickens.

  20. Add tamarind extract and mix well.

  21. Add natural sea rock salt to this gravy.

  22. Add little jaggery powder.

  23. Cover and in medium flame, do occasional stirring till oil get separate from the gravy.

  24. After 15-20 minutes gravy get thickens and oil get ooze out around the gravy.

  25. This pepper -garlic gravy is not too thick or thin, it should be in correct consistency.

  26. Healthy and tasty pepper-garlic gravy / poondu Milagu kulambu is ready for serving.

  27. Serve the spicy and healthy Poondu Milagu Kuzhambu with hot steaming rice along with a teaspoon of ghee or oil and tasted papad and enjoy this perfect healthy meal
