Heat oil.

Add garlic cloves.

Add chopped onions.

Add 2-3 pulp tamarind.

Add salt to the onion.

Sauteed in medium flame until onion get cooked well.

Add red chillies as per the taste.

Add chopped tomatoes.

Sauté well until tomato become soft not to mushy.

Switch off the flame and add grated coconut and sauté in heat of the pan itself.

Transfer in to plate and allow to cool.

Transfer in to mixie jar.

Grind them in to little coarse chutney with little water.

Add fresh mint leaves.

Grind in to little smooth chutney.

Transfer in to serving bowel and tempered with mustard seeds, urad dal, red chilli and curry leaves in hot oil.

Note
- sauté the roughly chopped onions properly in oil, otherwise the chutney may smell raw.
- Adjust red chillies according to your spice level.
- You can try with small onions too.
- You can use gingelly oil for tempering or replace with normal cooking oil.
