  1. To make Pepper Chicken Fry, start by marinating bone-in chicken pieces with a mixture of thick curd, turmeric powder, chili powder, ginger-garlic paste, and salt. Ensure that the chicken pieces are well coated with the marinade. 

  2. Allow the chicken to marinate for 15 minutes to infuse the flavors.

  3. Heat oil in a pan or kadai over medium heat. Add cardamon, bay leaves, cinnamon stick and cloves. 

  4. Add the chopped onions and sauté until they turn golden brown.

  5. Then, add the curry leaves and green chilies. Sauté for a minute.

  6. Add the ginger garlic paste and and Sauté for a minute

  7. Add the spice powders(Coriander Powder, Chilli Powder and Turmeric Powder) and  Sauté for a minute

  8. Add the chopped tomato and  Sauté it.

  9. Now, add the marinated chicken pieces to the pan and mix well with the onions. Cook the chicken on medium-high heat for about 10-12 minutes, stirring occasionally until it is cooked through and turns slightly brown.

  10. It should look like this after 10 minutes 

  11. Add mint leaves

  12. Add cumin and cook the chicken for 2 more minutes

  13. Add Pepper Powder and Sauté it.

  14. Garnish with fresh coriander leaves and serve hot with steamed rice, biryani, roti, or naan.
