Fiery and Flavorful Pepper Chicken Fry: A Spicy Delight!

Pepper Chicken Fry, also known as Chicken Milagu Varuval or Chicken Pepper Masala, is a mouthwatering dish that brings together the aromatic flavors of black pepper and spices with tender chicken pieces. It is a popular South Indian recipe that is perfect for spice lovers.

To prepare Pepper Chicken Fry, begin by marinating bone-in chicken pieces with a mixture of red chili powder, turmeric powder, ginger-garlic paste, salt, and a generous amount of curd. This combination will infuse the chicken with spicy flavors and tenderize it. Allow the chicken to marinate for 15 minutes, ensuring the flavors are absorbed.

In a hot pan, heat oil and sauté onions until they turn golden brown. Introduce curry leaves, green chilies, and whole spices such as cinnamon, cloves, and cardamom to release their aromatic essence. For an added burst of flavors, sprinkle some coriander powder, red chili powder, and turmeric powder over the sautéed onions. Stir the spices into the mixture and let them cook for a minute to enhance their flavors.

Next, add the marinated chicken pieces to the pan and mix them well with the seasoned onions and spices. Cook the chicken on medium heat, stirring occasionally, until it acquires a rich brown color and is thoroughly cooked. The spices will coat the chicken and infuse it with a delicious blend of flavors.

Finally, garnish the dish with fresh coriander leaves to add a vibrant touch. Serve the Pepper Chicken Fry hot with steamed rice or roti to complement the spicy and flavorful chicken.
