INSTRUCTIONS

First prepare the fresh masala paste For that heat the pan with 1 tsp of oil.

Add Whole spices cinnamon , cloves, cardamom , black stone flower , fennel seeds , cumin seeds , poppy seeds. Roast it in medium flame until turns light golden color.

Now add chopped ginger , garlic & green chilies. Sauté for few minutes.

Add chopped onion along with curry leaves , cashew nuts & required salt. Sauté until onion cook well .

Once the onion cook well add grated coconut & turn off the flame. Sauté the coconut for few minutes .

Once the masalas are cooldown add in to the mixie jar, Blend in to fine paste using 1/2 cup water.

To prepare the kulambu heat the pan with oil , once the oil is hot add bay leaf , curry leaves & red chilies. Sauté for few minutes.

Add fresh masala paste , Then add turmeric powder , Kashmiri red chili powder , red chili powder , coriander powder , Sauté in medium flame until masalas cook well also ooze out the oil .

Now add tomato puree , again sauté medium flame until masalas cook well also ooze out the oil .

Now add required water , salt & garam masala powder. Mix it well then cover & cook until masalas cook well .

Now break the eggs in a bowl and then add the egg in the bowl to the curry. I find that the eggs hold its shape better if poured from a bowl rather than breaking the eggs directly into the curry.

Don't stir the curry , add chopped curry leaves & coriander leaves . Now cover & cook another 5 minutes in medium flame.

Now our yummy & tasty egg curry is ready. finally add little ghee for optional.

Serve egg curry / udacha muttai kulambu with hot steamed rice , chapati , parotta , Idli & dosa.
