Udippi sambar | Udupi style sambar is a new sambar recipe without the use of homemade sambar powder. I recently tasted this sambar in a friend’s house who is a native of Bangalore. The sambar was very different, aromatic. The secret, I’ve realized, is in grinding the sambar powder fresh, in very little batches, and grinding it well. If that is taken care of, and the Toor Dal is cooked nice and soft, this recipe. So, here’s presenting the recipe for Udupi sambar aka Bangalore hotel sambar or tiffin sambar.

To prepare sambar paste

First Heat the pan with tsp of oil then roast all ingredients under the "to prepare sambar paste" table until turns golden color.

Then transfer to a blender also add water and blend to smooth paste.

Heat the large pan with oil then add onion & curry leaves ,Sauté for a couple of mins.

Then add tomato sauté until tomatoes cooked well.

Once tomato cooked well add cooked Toor dal . mix well.

Then add prepared masala paste. simmer for 4-5 minutes.

Now Add tamarind extract cook until tamarind raw smell goes off.

To prepare seasoning, heat oil in small kadai and add mustard seeds, asafetida, dried red Chilli and curry leaves.

Once its splutter then pour over prepared sambar. Add chopped coriander leaves .

Now our Udupi sambar is ready to serve. Serve with Hot Idli, dosa, Pongal & Paniyaram.
Note
- Instead of kopparai / Dry coconut you can add Fresh coconut also.
- You can add any vegetables also.
