Ulundhu Sadam Recipe | Variety Rice Recipe


Uluntham Paruppu Sadam and ellu thuvaiyal is very popular in Tirunelveli district. usually prepare this lunch menu for teen aged girls during their puberty. On those days, these dishes will be in their menu for sure. Black gram or Urad dal is a rich source of nutrition. This fiber can help in improving digestion. If you are suffering from stomach constipation, diarrhea, cramps, or bloating and you want to get rid of those problems, include Urad dal in your diet. Protects Heart, as it has some important minerals such as magnesium and potassium. The high amount of iron in Urad dal is best for pregnant women to increase productions of blood. To improve bones, include Urad dal in your diet. The rich minerals present in Urad dal such as magnesium, iron, potassium, phosphorus, and calcium will play an important role in improving bones. Urad dal is very rich in minerals and vitamins that help us in any kind of skin irritation. It has natural antiseptic properties that help kill acne which causes bacteria. It will also remove the excess oil from the skin and clear the pores. Urad dal is also useful for hair, as it is rich in minerals and essential fatty acids that help in controlling dry and brittle hair.  Black gram is known as urad dal in Hindi, minappappu in Telugu and uzhunnu parippu in Malayalam. This black urad dal rice goes with Sesame thick chutney (ellu thuvaiyal), multi vegetables coconut gravy (aviyal) or any non veg curry. Prepare this rice non-mushy in that case, the best option would be to soak the dal for a long time and pressure cook it for just one whistle.

To prepare Black urad dal rice

To prepare Black Sesame chutney/ ellu thogayl


  1. Heat a pan, dry roast the skinned split urad dal.

  2. Dry roast in medium flame until you get nice aroma.

  3. Dry roast fenugreek seeds. Until turns little brown.

  4. Mix both roasted Black urad dal and fenugreek seeds.

  5. Add rice to dal mixture and wash twice.

  6. Soak the rice with dal for 10 mins.

  7. Heat pressure cooker with enough water for rice and dal.

  8. Add garlic cloves. And allow to boil.

  9. Once water start to boil, add soaked rice and dal without any water.

  10. Allow to cook rice and dal in low-medium flame until half cooked.

  11. Add salt as per taste and grated coconut.

  12. Now close the pressure cooker lid, keep the flame in low for about 5 mins.

  13. Allow to release pressure naturally and open the lid.

  14. Very healthy non mushy Black urad dal rice is ready for serving.
