Kheer in general is a pudding. And Carrot Sabudana Kheer or Carrot Sago Payasam is a little twist to regular sabudana kheer. It is delightfully sweet, and the addition of carrots cashew paste add natural sweetness and a gorgeous texture and color to this kheer recipe. This recipe is rich and creamy sweetened dessert . it is generally served during the fasting season also festival session.

payasam or particularly the kheer recipes are very common dessert served in most of the indian households. most of the time it is either made with soaked rice or with roasted semiya or also known as vermicelli.but the kheer can also be made with grated carrots which makes it a healthy and rich dessert recipe.

INSTRUCTIONS TO PREPARE KHEER

  1. In a pressure cooker add chopped carrot, cashew nuts , 1/2 cup milk & 1/2 cup water. Now pressure cook about 2 whistle in medium flame.

  2. Once the carrot & cashew nuts cook well drain the milk & water, Once its cool down gind like a fine paste.

  3. To prepare kheer take a heavy bottom pan. Add the remaining milk & soga / javvarisi.

  4. Cook the soga / Javvarisi  in low medium flame. keep stirring in bottom & side of the pan. 

  5. Once the soga cooked well add drained milk & cashew & carrot paste. Mix it well.Cook anothe 5 minutes in Low medium flame.

  6. Once the soga cooked well add sugar , mix it well cook another 2-4 minutes.

  7. Finally add cardamom powder & chopped nuts , mix well then switch off the flame.

  8. Yummy & tasty kheer is ready to serve.
