Idlis are very popular breakfast in Indian homes, but sometimes we got some leftover idli or want to try something different then this innovative recipe comes in mind. Chilli fry idli is a tongue-tickling dish that is made out of cold idlis or leftover idlis. Obviously, you can make them with freshly cooked idlis as well, but for better results, you should refrigerate the idlis for at least an hour. Idli fry recipe is a very thought-provoking one and easy to make as well. You can eat these idlis at breakfast or dinner. All you need to do is cut the leftover idlis into bite- size or small cubes and toss it with some veggies. You will have to add some spices and sauces to make it even better. Keep in mind that idlis should be refrigerated before cooking.  It’s an interesting fusion snack or starter recipe. idlis are deep fried before coating it into the masalas. It is easy to prepare and liked by everyone, especially in the cold weather everyone likes this hot and spicy version of idli. It can serve with simple raita or without any side dish.

  1. For nice result and avoid over oil accumulation, prepare idli in morning time to prepare chilli idli for evening snack or dinner. Cut 3 idlis in to cube sized pieces.

  2. Now add one by one cut idlies in to hot oil to deep fry in high flame. remove once the outer portion looks slight golden brown.

  3. Do it in batches and set aside.

  4. Heat the pan with oil.

  5. Add fennel seeds, dry red chillies without seeds, few curry leaves, slitted green chillies and chopped capsicum. Sauté well in medium flame.

  6. Add chopped onions, ginger garlic paste sauté until onion transparent and ginger garlic paste’s raw smell goes off.

  7. Add required salt for masala.

  8. Add tandoori masala, red chilli powder and turmeric powder. Sauté well until raw smell goes off.

  9. Add tomato puree and butter. Sauté until masala become mushy.

  10. Add sugar to balance the taste. Sauté until oil gets separates from masala.

  11. Add fried idlies, toss well until all coated with masala.

  12. Finally add chopped coriander leaves.

  13. Simple, quick and tasty chilli idli is now ready for serving.
