How to make Lemon Sevai / Idiyappam

To Prepare Santhavai

  1. Take boiled rice, washed twice and soak in water for 2-3 hrs.

  2. Grind it like a smooth fine paste.

  3. Add water to Make it like dosa batter.

  4. Steam cooks the boiled rice batter about 8-10mins.

  5. Check once whether the rice is cooked or not by dipping tooth pick or knife inside, it should be clean when take it out.

  6. That hot cooked idli dumped inside the sandhavai machine, keep the plate at the down side to collect.

  7. Nice textured sandhavai is now ready.

  8. Allow to cool completely before start lemon sevai.

  9. Heat the pan with oil.

  10. Add mustard seeds, split urad dal, chana dal.

  11. Once start splutters, add cumin seeds and asafoetida.

  12. Add dry red chillies and green chillies.

  13. Add few curry leaves and turmeric powder. Sauté well for few mins.

  14. Add pre-soaked and little cooked moong dal and salt.

  15. Sauté well until all water gets shrink. Switch off the flame.

  16. Squeeze the lemon, mix well in the heat of the pan.

  17. Add cooled sandhavai to the lemon mixture.

  18. Mix gently. Tasty lemon sevai is ready to serve with coconut chutney.
